During its meeting on Tuesday, May 11, the Village of Ellicottville’s Planning Board granted a special use permit for catering company Wholesome Hideaway to build a food preparation space in the Ellicottville Square complex on Bristol Lane.

Owner Brittany Lowry plans to expand the wholesale food business she currently operates out of Nature’s Remedy on Monroe Street in Ellicottville.

The business specializes in dairy-free, gluten-free, peanut-free and other items that cater to people with special dietary needs or requests. Lowry expects to be able to expand her offerings beyond specialty granola bars and other items that are already being sold to retailers.

The kitchen will require a sink, range and other appliances and equipment. Proper stove ventilation will be installed.

Lowry plans to begin operations this summer in the space being vacated by Core Performance Fitness, which is moving to a larger location in the same complex.

The board scheduled a public hearing on Lowry’s special use permit for its June 9 meeting.

The Planning Board also approved a sign permit for Sprague Development’s new housing development on Fillmore Rd. The temporary sign, which will advertise custom built homes on 19 lots, will be placed on the south side of Bristol Lane for the foreseeable future. It will be moveable to accommodate sold lots, and the area around it will be landscaped per the Planning Board.

The board also approved an architectural amendment for a structure at Ellicottville Brewing Company.

The next meeting of the planning board will be held at 5:30 p.m. on Tuesday, June 9 in the town/village hall.
