Upscale Gourmet Meals, a Unique Bar and Outdoor Dining Coming Soon

Cadillac Jack’s has been a favorite eatery to all who visit Holiday Valley and Ellicottville for many years.  And now it will have a new address in the heart of Ellicottville at 24 Monroe St., with intentions of being open by ski season. Only now, they won’t close at the end of ski season — they will be open year ‘round!

Owned by Tom and Tina Zerbian, Cadillac Jack’s has been across from The Inn at Holiday Valley for many years.

“We’ve offered grab-n-go meals for skiers – getting people and families fed and back out on the slopes as quickly as possible,” Tina Zerbian said with a laugh. “Now, we will have a chance to offer upscale gourmet meals, and a more thoughtful menu that encourages guests to sit and linger over dinner conversations.”

Not wanting to reveal too many details, she did hint at a very “unique” bar design that will be a more intimate style than the 20-plus-seat bar at the old location.


“We want to have an earthy, nostalgic atmosphere,” said Zerbian. “We want to highlight what is good about Ellicottville. We all have great memories of how it used to be here, and we want to capture that in our new style.”


The main floor will have the kitchen and the bar area, and seating for smaller dining parties. The second floor will feature indoor and outdoor dining, with the addition of a new patio.

“Ellicottville has a shortage of outdoor patio dining, and we’ll be able to offer a unique dining space there,” said Zerbian. (See floor plans above and exterior rendering right.)

“We will still feature some of our favorite menu items, such as Hot-Lip Mussels and our large selection of craft beers on tap, including Ommegang. But we’ll be adding to our wine list, offering a larger selection of affordable wines. And we’ll be offering wine and beer pairings throughout the seasons,” said Zerbian.

Large groups will always be welcome, and catering to special parties is a favorite, whether it’s a ski group, an anniversary, birthday parties or other private parties.
